For all you honey loving, cooking fans out there, the National Honey Board has a website with a fabulous recipes section, including beautiful photography for inspirational dish presentations. Their recipes are a must read for honey aficionados! Now that the fall has set in, Pualani Bee Farm's seasons of honey production has slowed down leaving us time to take care of other must tend to business, as in trying out some of these mouthwatering recipes using the fruits of our bees' labor: Pualani 100% raw Hawaiian honey!
Having traveled in the middle east and northern Africa and lived in southern Spain and coastal Tanzania, where the cuisine is influenced by Middle Eastern culture, I've always wanted to learn how to make a honey-dripping-down-your-fingers baklava--a rich, sweet dessert pastry made of layers of filo filled with a honey sweetened chopped nut mix. So that was one of the first recipes I searched for on the website.
Lo and behold, there are four baklava recipes, each more enticing sounding than the next! These include a recipe for a classic almond baklava, baklava cookie cups with pistachios, apple baklava bites with walnuts, and OMG... brandy baklava for those chilly winter nights!!! So I have given myself the honey-filled baklava challenge: to try making each one of these delicious sounding recipes between now and the end of the year. What will your honey-filled recipe challenge be?
